Cinco de mayo, #JLF style


In honor of this glorious holiday we find ourselves celebrating this Tuesday, we decided to share with you our favorite fajita casserole recipe!  It is very easy and quick to pull together, and we find it to be handy when hosting a lot of people.


#JLF Favorite Fajitas

1-2 pounds of chicken (sliced)
1 onion (sliced)
2 peppers (sliced)
Chili Powder
#JLF Salsa (watch out for added sugars!)
Shredded Cheese

Preheat oven to 400 degrees.  Combine the chicken, peppers, and onion in a casserole dish(or two).   Pour olive oil over the mixture.  Season as desired.  We suggest salt, pepper, garlic powder, and chili powder.   Put the casserole dish in the preheated oven for 20 minutes, and then check on it every 4-5 minutes until the chicken is fully cooked.  Serve with a guacamole, salsa, cheese, and a #jlf margarita. Enjoy!
